On a regular basis, I struggle to find foods that my daughter will actually eat. I own the recipe book Deceptively Delicious and I’ve read through The Picky Eater Project, not to mention, countless blogs and other resources. Still, very little interests her. This HEALTHY ice cream is one food that my daughter actually requests almost daily. Because it is so nutritious, I feel zero guilt when she eats it by the bowl full!
It simply doesn’t get any better than this amazing “ice cream” that is packed with protein, iron, fiber, calcium, potassium, vitamin B6, manganese, vitamin C, biotin, and copper. The frozen bananas give the texture and temperature of ice cream, while the butters and unsweetened cocoa give it a rich and delicious taste.
- 2 frozen bananas
- 1 TBSP unsweetened cocoa
- 1 TBSP peanut butter
- 1 TBSP almond butter
- (can also use 2 TBSP of peanut butter, or 2 TBSP of almond butter, depending on what you have on hand.)
- Add powdered probiotics according to its serving size.
- Cut and peel frozen bananas and put in food processor.
- Add peanut butter, almond butter and cocoa.
- Blend until smooth.
